Mark Rosenstein, author of In Praise of Apples and President of The Appalachian Sustainable Agriculture Project, has been featured in Gourmet, The Wall Street Journal, and Food & Wine’s first Honor Roll of American Chefs. Founder and owner of The Market Place Restaurant for thirty years, Mark has been focusing on local foods since 1979. He teaches fine cooking and leads food tours in Burgundy and Asheville.
